INGREDIENTS
- Potatoes – 1 medium sized
- Leek – 1 stem
- Red onions – 1/2
- Garlic – 2 cloves
- Coriander– for garnish
- Barley – 2 tbsp uncooked(optional)
- salt to taste
- pepper to taste
- Olive oil – 1 tbsp
- Water – 3-4 cups
Direction
- Chop potato, leek into small pieces.
- Heat olive oil in a pan and saute the onions and garlic till they are translucent for a minute.
- Add potato, leek and salt to taste cover it up with water.
- Once soft and cooked well.
- Make a puree of potato leek ,onions and garlic.
- To the stock on the stove, add uncooked barley .
- Continue cooking till the barley is cooked. Add the puree, pepper and salt according to taste.
- Add water if required.
- Garnish with coriander and serve hot.
