Eggplant Dal



Ingredients

  1. Toor dal -3/4 cup
  2. Brinjals-2
  3. Salt to taste
  4. Tamarind-small piece
  5. Tomato-1
  6. Chillies-3
  7. Sambar pwd-2tsp
  8. Onion -1
  9. Ginger & Garlic paste-1tsp
  10. Turmeric pwd
  11. Oil
  12. Water
Seasoning
  1. Mustard seeds
  2. Curry leaves
  3. Cumin seeds
  4. Asafoetida
  5. Coriander leaves-garnish
Directions
  • Cook Toor dal in water and keep aside .
  • In a pan add oil to fry onions ,tomato ,brinjal ,ginger-garlic paste.
  • Once they soften add salt turmeric pwdand sambar pwd.
  • Now add cooked dal and mash all ingredients with a masher.
  • Now add Tamarind water and let it boil 2-3 mins.
  • Remove from heat and set aside.
  • For seasoning in a small pan add 2tsp oil once hot enough.
  • Add mustard,jeera seed ,curry leaves and hing.
  • Pour the entire seasoning into cooked dal.
  • Garnish with coriander leaves.
  • Serve hot with rice .
