Leek Potato Soup


INGREDIENTS


  1. Potatoes – 1 medium sized
  2. Leek – 1 stem
  3. Red onions – 1/2
  4. Garlic – 2 cloves
  5. Coriander– for garnish
  6. Barley – 2 tbsp uncooked(optional)
  7. salt to taste
  8. pepper to taste
  9. Olive oil – 1 tbsp
  10. Water – 3-4 cups

Direction

  • Chop potato, leek into small pieces.
  • Heat olive oil in a pan and saute the onions and garlic till they are translucent for a minute.
  • Add potato, leek and salt to taste cover it up with water.
  • Once soft and cooked well.
  • Make a puree of potato leek ,onions and garlic.
  • To the stock on the stove, add uncooked barley .
  • Continue cooking till the barley is cooked. Add the puree, pepper and salt according to taste.
  • Add water if required.
  • Garnish with coriander and serve hot.
